I had planned different posts for today and yesterday but I have to be real with you guys—I am worn out and not feeling well today so I indulged in a sweet treat and have been taking lots of deep breaths. Do you ever have days where nothing seems to go as planned?
On to happier tunes, I’m super excited that tomorrow is the last day of the 21-Day Detox Challenge! The practice of blogging about it has been fun for me and I hope inspiring for you. (However, the word “challenge” is not an understatement.)
The sweet treat pictured below is a super easy “ice cream” recipe that you can find all over Pinterest. It’s frozen bananas and cocoa powder blended together and that’s it! I don’t like bananas but when blended up they develop a creamy texture (like real ice cream) and the banana flavor is surprisingly mild. The addition of cocoa powder minimizes the banana flavor even more. There are many variations of this recipe—from blending the bananas with other types of fruit, to adding peanut butter, nuts, chocolate chips or flavorings. My favorite so far is this one with cocoa (I also like to add a tiny sprinkling of sea salt before serving).
Start by slicing up ripe bananas* and freeze them. Then use a high-powered blender to puree them (about 2 cups, while still frozen), with 2 Tbl. unsweetened cocoa powder. I usually need to stop the blender 5-6 times and stir the mixture since it’s so thick. The bananas make this plenty sweet so no need to add sugar. Once it’s smooth, just scoop and eat and freeze any leftovers. Yum! This really hit the spot today. Chocolate fixes anything, right?
*Whenever our bananas get past prime eating ripeness, I slice them up and add them to a gallon-sized Ziploc bag which lives in the freezer. They’re great for making this ice cream, or for adding to smoothies or shakes. My boys also like to snack on them right out of the freezer.
Days 19 & 20:
Wins: Found 20 minutes in the day to pick out some flowers for the deck. It’s the little things that brighten my day. And I’m sticking with good food choices even though I don’t feel like it.
Flubs: I didn’t make room for exercise either day but I have a plan for next week that I’m confident I can stick with!
